I love reading the recipes in the book because they are so relaxing. The recipe comes from the Tassajara Bread Book, given to me by my California-dwelling sister last year. Every Sunday for five years she has shaped loaves from the “Tassajara Bread Book” and then, two years ago she began exploring naturally yeasted dough. We used the recipe from the Tassajara Bread Book, my mom's stained, yellowed copy from the 70′s. One of the items on my New Year's resolution list was to learn to make bagels, and I started with The Haven's bagels which were really the Tassajara Bread book's bagels.
